LSR7 elementary schools to offer salad bar for students and staff starting February 19

Starting Tuesday, February 19, 2019, the LSR7 Nutrition Services Department is launching salad bars in all 18 elementary schools. This step is part of an ongoing effort to improve healthy eating in our schools by making the healthy choice the easy choice.

Students and staff will be able to choose a full chef or tossed salad for their entree, or select fresh or hot veggies and fruits as sides. Different portioned protein choices will be offered daily, including diced ham, diced turkey, hard boiled eggs, grilled chicken strips, and low-fat shredded cheddar or mozzarella cheese for the chef salads. A rotating fresh variety of vegetables of broccoli, cauliflower, carrot and celery sticks, green peppers, tomatoes, radishes, cucumbers and other options will be available. Occasionally, legumes such as garbanzo beans, red kidney beans and black bean salsa will also be offered. Homemade coleslaw, pineapple slaw, pasta salad, carrot/raisin salad and broccoli salad will be offered as “limited time”  and “special day” choices in order to remain within our federal guidelines. Homemade croutons and low fat dressings will also be offered daily.

The Nutrition Department is excited to offer elementary students and staff a convenient and affordable healthy choice, and they are currently working to make this option available in middle schools and high schools.
